Ingredients
- 12 oz elbow pasta
- 2 cups butternut squash, peeled and cubed

- 2 tbsp all-purpose flour
- 2 cups whole milk
- 1½ cups shredded cheddar-style cheese
- ½ cup shredded mozzarella-style cheese
- ¼ tsp ground nutmeg
Instructions
Preheat the oven to 400°F. Toss the butternut squash with olive oil, salt, and pepper, then roast for about 20 minutes until very tender and lightly caramelized.
Cook the pasta in salted water until just al dente, then drain and set aside.
