Ingredients

For the beef
• 1 lb ground beef
• 1 tbsp olive oil
• 1 small onion, finely chopped
• 2 garlic cloves, minced
• 1 tsp paprika
• ½ tsp salt
• ½ tsp black pepper

For the potatoes
• 3 cups diced potatoes (small cubes)
• 1 tbsp olive oil
• ½ tsp salt
• ½ tsp black pepper
• ½ tsp garlic powder

For the creamy herb sauce
• ½ cup sour cream or Greek yogurt
• ¼ cup milk
• 1 tsp dried parsley
• ½ tsp dried dill
• ½ tsp onion powder
• Salt and pepper to taste

To finish
• ½ cup shredded cheese optional
• Fresh parsley for garnish

Instructions

  1. Prepare the potatoes
Preheat the oven to 400°F. Toss the diced potatoes with olive oil, salt, pepper, and garlic powder in a baking dish. Spread them evenly so they roast and crisp properly. Roast 15 minutes to give them a head start.
  2. Cook the beef mixture
While the potatoes roast, heat olive oil in a large skillet over medium heat. Add the onion and cook 2 minutes until soft. Stir in garlic and cook 30 seconds.
Add the ground beef, breaking it into small pieces with a spoon. Season with paprika, salt, and black pepper. Cook until browned and slightly caramelized, about 5–6 minutes. Remove from heat.
  3. Mix the creamy herb sauce
In a small bowl, whisk together sour cream (or yogurt), milk, parsley, dill, and onion powder. Adjust seasoning with a pinch of salt and black pepper. The sauce should be creamy but pourable.
  4. Assemble the bake
Remove the potatoes from the oven. Add the cooked beef over the potatoes and mix lightly so flavors come together while keeping some texture.
Pour the herb sauce evenly across the surface. Do not stir too much — layering gives a better bite.
  5. Bake to finish
Return the dish to the oven and bake 15–20 minutes until the top is lightly golden and bubbling at the edges.
If using cheese, sprinkle during the last 5 minutes until melted.
  6. Serve
Let rest 5 minutes to set the layers. Garnish with fresh parsley and serve warm.
