Ingredients

For the chicken

  • 2 chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • Juice of ½ lemon

For the bowl

  • 2 cups chopped romaine
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes, halved
  • ½ cup diced red onion
  • ½ cup crumbled feta
  • Lemon wedges for serving

For the tzatziki

  • 1 cup Greek yogurt
  • ½ cup grated cucumber (squeezed dry)
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 1 tbsp fresh dill or ½ tsp dried dill
  • 1 tsp lemon juice
  • Pinch of salt and pepper

Instructions

  1. Mix olive oil, garlic powder, oregano, paprika, salt, pepper, and lemon juice. Coat the chicken and let marinate 10 minutes.
  2. Grill or pan-sear chicken 5–6 minutes per side until golden and cooked through. Let rest, then slice.
  3. Make the tzatziki by mixing yogurt, grated cucumber, garlic, olive oil, dill, lemon juice, salt, and pepper.
  4. Assemble bowls with romaine, cucumber, tomatoes, red onion, feta, and sliced chicken.
  5. Add a generous spoonful of tzatziki and serve with lemon wedges.
